Garlic & Black Pepper Rub
Garlic & black pepper rub works wonderfully with any other meats, fish or vegetables. If you mix one tablespoon of olive or rapeseed oil it makes a lovely marinade. Can also be used to enhance the flavour of sauces or casseroles.
For a lovely garlic and black pepper flavour, seaason all over uncooked whole duck or portions and gently rub in, leave in the fridge for 30 minutes before cooking to infuse the flavours.
