Smoked Spiced Rub
Smoked spiced rub works wonderfully with any other meats, fish or vegetables. Makes a great alternative to fajita seasoning or cajun seasoning. If you mix one tablespoon of olive or rapeseed oil with smoked spiced rub it will make a lovely marinate.
For a lovely smoky, lightly spiced flavour, season all over uncooked whole duck or portions and gently rub in. Leave in the fridge for 30 minutes before cooking to infuse the flavours.
